Meanwhile bring remaining 3 cups pho broth to a boil over medium-high. Pour over gelatin mixture, and stir until gelatin dissolves.
Arrange noodles, thin sliced eye round steak, well done brisket, soft tendon, basil, scallions, onions, bean sprouts in a 6-cup mold; pour gelatin mixture over pho ingredients. Chill until set, about 4 hours.
Dip bottom of mold warm water for 15 seconds. Unmold onto a serving platter, serve with Sriracha, lime wedges, and Thai basil.
