Old-Fashioned Vanilla Ice Cream

(167)

Make this old-fashioned vanilla ice cream to go atop your favorite dessert, or dress it up with some of your favorite toppings for a tasty frosted treat.

Yield:
2 quarts

Whether it's jazzing up pie, dripping with fudge, or simply solo, you'll scream for this old-fashioned vanilla ice cream. Unlike a French custard, this ice cream doesn't contain any eggs, and doesn't require cooking. Simply whisk together cream, milk, sugar, vanilla, and a pinch of salt. Use an ice cream maker to churn, or hand churn using our easy method.

Ice Cream Variations

This recipe is flavored simply with vanilla extract, but you can use vanilla bean paste if you prefer. Mix in any of the following ingredients to customize the ice cream base:

  • Peppermint extract
  • Cocoa powder
  • Instant espresso

Ingredients

  • 4 cups heavy cream

  • 1 ½ cups sugar

  • Pinch of salt

  • 2 tablespoons pure vanilla extract

  • 2 cups milk, or half-and-half

Directions

  1. Whisk ingredients:

In a large bowl, whisk together all ingredients, adding the sugar gradually.

  2. Churn and freeze:

Transfer to an ice-cream maker, and freeze following manufacturer's instructions. Store in an airtight container.

If you don't have an ice cream maker, you can churn the ice cream by hand using two zip-top bags. Pour the mixture into one bag, remove all of the air, and then zip the top to seal.

Fill a larger zip-top bag with ice and salt. Add the bag with the ice cream mixture inside the larger bag and zip the top. Shake the bag for 8 to 9 minutes to freeze the ice cream for a soft serve texture. Place in the freezer for a firmer texture.
