Fall inspires hope. Hope in the form of wearing a pair of jeans without wanting to faint from heat stroke. But it also means cooking inspiration from a new wave of cookbooks—so many cookbooks. This fall, it's hard to know which books to be most excited for. Maybe the new baking book from the queen Rose Levy Beranbaum? Or the everyday cooking book from that other queen, Dorie Greenspan? Pro-cooking from Ina Garten? Simple cooking from Ottolenghi? That new book about Filipino cuisine, or that collection of recipes from renowned Sweet Home Cafe in the National Museum of African American History? Or a guide to fermentation from none other than the fermentation lab at Noma? It's impossible to decide, so here—read about them all.

BAKING AND DESSERTS

Sister Pie by Lisa Ludwinski

Lisa Ludwinski, the owner of the famed bakery Sister Pie in Detroit, is out with a cookbook just in time to toss all of that lingering summer produce into an epic pie—and to gear up for holiday pie-baking season. 75 pie recipes featuring unusual flavor combinations (there's a malted lime pie, cardamom and tahini squash pie, and a sweet beet pie, just to name a few) are divided by season, demonstrating the bakery's devotion to the seasonal produce of Detroit but expanding it outward to your kitchen. There are also cookies, scones, and other baked goods—plus salads and breakfast dishes. Bring the wisdom, quirkiness, and fun of the bakery to your home kitchen, and become a better baker along the way.

Food52 Genius Desserts by Kristen Miglore

The 2015 cookbook Genius Recipes—inspired by Kristen Miglore's James Beard Award-nominated column that rounds up game-changing techniques and truly stellar recipes for Food52—offered 100 recipes that promised to "change the way you cook." It was a bestseller and it won an IACP award, and now a sequel offers "100 recipes that will change the way you bake." This compilation of game-changing dessert techniques and recipes from respected chefs, recipe developers, and home cooks from the Food52 community includes François Payard’s Flourless Chocolate-Walnut Cookies, Nancy Silverton’s Butterscotch Budino, a cake made with two whole oranges, and 3-ingredient cookies from Dorie Greenspan, just to name a few.

Rose's Baking Basics by Rose Levy Beranbaum

Rose Levy Beranbaum is the author of the canonical baking book, The Cake Bible. (Also: a bread bible, a pie and pastry bible, and several other impeccable cookbooks.) Now, she's back with her ninth effort, a detailed instructional text for beginning bakers. No detail is left unexplained here—there are step-by-step instructional photos, prep work is bulleted and placed at the top of the recipe so you can be a hyper organized and precise baker, and the headnotes give detailed explanations of the techniques and tell you not just how to make something, but why it works. In other words, it's like having one of the greatest bakers in the world whispering instructions in your ear. And that's a great thing for bakers who are beginners or pros.

All About Cake by Christina Tosi

Have you ever heard of Momofuku Milk Bar? Of course you have. Christina Tosi—arguably the world's most famous and maniacal sugar addict—is out with her third cookbook, an in-depth exploration of cake. It's full of the bakery's signature naked layer cakes, but also easy, regular old home cooking recipes, like Bundts and microwaveable mug cakes. More than just providing recipes, though, this book teaches you how to dream up your own wild cake concoctions and invent flavors using the same whimsy and expertise as Tosi.

Modern Baking by Donna Hay

Wildly popular Australian food writer, cook, and stylist Donna Hay is back with another cookbook offering, dedicated entirely to dessert. Crispy chocolate coconut bars, an impeccable-looking chocolate cake, and a vibrantly pink strawberry, rhubarb, and ricotta galette are among the highlights. But the real appeal of this book is that it contains some of the most insanely gorgeous photographs of dessert we've ever seen.

Red Truck Bakery Cookbook by Brian Noyes

None other than Barack Obama proclaimed his love for this rural Virginia bakery—do you need any other reason to check out this book? Okay, fine, here are a couple more: it's full of Southern classics like buttermilk biscuits and walnut chews, as well as a number of Virginia specialties like Shenandoah Apple Cake and Appalachian Pie with Ramps and Morels.

American Cookie by Anne Byrn

This cookbook from the author of the Cake Doctor series, Anne Byrn, gives a detailed account of American cookies of all kinds, just as she did with cake in her previous book, American Cake. Each of the 100 recipes for iconic American cookies comes with a robust history and an account of its evolution. Recipes/stories include the sugar cookies, fig cookies, and gingerbread brought over to the colonies; Katherine Hepburn's brownies; and Democratic Tea Cakes.

Sous Vide Cookbooks

Sous Vide Made Simple is a follow up to Lisa Q. Fetterman's original cookbook Sous Vide at Home; it focuses on easy weeknight recipes using the immersion circulator, debunking the idea that sous vide cooking always has to be laborious and fussy. It also provides recipes like Salmon Tacos with Avocado and Chipotle, Cauliflower Steak with Capers and Lemon, Carnitas Quesadilla, and Thai Red Curry, showing that the machine isn't just good for hunks of meat. The tagline of Peternell's newest book is "A vegetarian book, kind of"—an odd choice for a book that calls out two non-vegetarian ingredients in the title. But the idea here is that vegetables should be at the center of the plate, and meat should serve as a secondary player—just enough to season and add flavor to the main event.

Bong Appétit by Editors of MUNCHIES

A book about cooking with weed, based on the Munchies/Viceland series of the same name. But don't get it twisted: this is not your typical weed cooking (i.e. brownies and junky snacks). Instead, this book is filled with sophisticated cocktails, wholesome chicken dinners, and delicious pastas. (Don't worry: there's also a baking and dessert section.) Bonus: the book also has comprehensive guides to infusing and dosing, plus information about pairing strains, sourcing your weed, and more.

Edibles: Small Bites for the Modern Cannabis Kitchen, by Stephanie Hua (Author), Coreen Carroll

This cookbook features 30 bite-sized, low-dose marijuana baking recipes including simple recipes like Spiced Superfood Truffles alongside recipes for more advanced bakers like Strawberry Jam Pavlovas. It also comes with instructions for weed-infused butters and oils that you can add to any recipe, as well as detailed information on dosage and portions.

Mississippi Vegan by Timothy Pakron

Blogger Timothy Pakron forages ingredients and cooks from his home garden in Jackson, Mississippi, creating recipes that pull from the Cajun, Creole, and southern classics he grew up with—only entirely vegan. In this, his first cookbook, he lays out 125 plant-based recipes that celebrate the environment of the Mississippi Gulf Coast, and demonstrates that there's been a plant-focused tradition in the area all along.

Skinnytaste One and Done by Gina Homolka

Cravings: Hungry for More by Chrissy Teigen

Remember when Chrissy Teigen tweeted to the world, asking for ripe bananas to make banana bread with? We're finally getting the cookbook with that final banana bread recipe. There's also onion dip, pad Thai carbonara (!!), and many more of the kinds of comfort foods that did so well in Teigen's first best-seller, Cravings.

Carla Hall's Soul Food by Carla Hall

Co-host of The Chew (RIP) and former Top Chef contestant Carla Hall provides recipes for contemporary soul food, proving that it's much more than fried chicken and mac and cheese. There are 145 recipes packed into this book, including recipes inspired by her Nashville roots, and recipes inspired by the foods of Africa, the Caribbean, and the American South.

Pull Up a Chair by Tiffani Thiessen

Thiessen, the actress (Saved by the Bell and Beverly Hills 90210) and star of the Cooking Channel show Dinner at Tiffani’s, has filled this book with recipes for things like stuffed French toast, short rib enchiladas, boozy date milkshakes, and cream cheese pie.

Estela by Ignacio Mattos

The famous New York City spot from four-time James Beard-nominated chef Ignacio Mattos finally has cookbook. Expect the restaurant's famed innovative yet simple cuisine, including bright and savory fruit salads and other vegetable-forward dishes, along with comforting mains like lamb ribs with chermoula and honey, and mussels escabeche on toast.

The Ritz London: The Cookbook by John Williams

The first cookbook to share the recipes of the legendary Ritz London restaurants, including the Michelin-starred Ritz Restaurant, the Palm Court, and Rivoli Bar. You'll find lunch and dinner menu delicacies divided by the four seasons; each chapter is filled with luxurious and iconic dishes such as roasted scallops with bergamot and avocado, pea & wild garlic soup and salt-baked celeriac, the signature Ritz venison Wellington and Crêpes Suzette, and canard à la presse with truffled Cambridge cream. With culinary and life musings from chef John Williams, and stories that provide peeks into the backstage happenings at the restaurants, this is as much a beautiful souvenir as it is a cookbook.

Bestia by Ori Menashe and Genevieve Gergis

L.A.'s insanely beloved restaurant, Bestia, has put together a cookbook full of the same flavorful regional Italian cooking served at the beautiful restaurant. There are chapters on making bread, pasta, and charcuterie, as well as sections about building flavor with stocks and sauces. The accessible instructions just might make it possible to recreate the flavors you loved so much on your last trip to Los Angeles.

Joe Beef: Surviving the Apocalypse by Frederic Morin, David McMillan and Meredith Erickson

The first cookbook from Frédéric Morin, David McMillan, and Meredith Erickson of Joe Beef in Montreal, The Art of Living According to Joe Beef, was more than a compilation of recipes—it offered well-rounded (but sometimes insane) life advice and stories, such as the recipe for kale-for-a-hangover, which advises eating it and then going to bed. With this book, the trio returns to form, offering 150 new recipes from their restaurants but also advice on making your own soap and cough drops. There's also a 16-page fold-out guide with recipes for stocking a cellar with essentials for the end of the world, like canned bread, pickled pork butt, and smoked apple cider vinegar. Kind of bleak, but hey—when the apocalypse comes, at least you'll be prepared to throw one final dinner party.

A Very Serious Cookbook by Jeremiah Stone, Fabián von Hauske and Alison Roman

The Lower East Side tasting menu restaurant Contra, and its casual cousin Wildair, are beloved for their hyper seasonality and creativity—and their killer natural wine lists. In this cookbook, the restaurants' two chefs, Jeremiah Stone and Fabián von Hauske, delve into how and why they developed the menus and dishes at the acclaimed restaurants—and how you can make them, too. With a forward by the comedian Eric Warheim, there's more than just recipes on offer here: the book is full of wit and stories that'll satisfy you just as much as the food.

Rich Table by Sarah Rich and Evan Rich

This cookbook from the Michelin-starred San Francisco restaurant of the same name features recipes from the restaurant, of course. But it also includes homey offerings that the husband and wife duo Sarah and Evan Rich make for their friends and family. The couple leans on their Louisiana and New Jersey upbringings for inspiration, but are also always inspired by the fresh produce and high quality ingredients of California.

EMILY: The Cookbook by Emily Hyland and Matthew Hyland

The wood-fired pizza at the New York restaurant Emily—and its spinoff Detroit-Style pizzeria Emmy Squared—is famously delicious. With owners Emily and Matt Hyland’s first cookbook, you can make this delicious food at home—no wood-fired oven required. Of course, you'll also learn how to make the Emmy Burger (one of New York's best) and also snag the restaurant's recipes for wings, salads, and pastas.

Mastering Pizza by Marc Vetri

Speaking of Pizza, here the Italian-trained chef Mark Vetri (of the famed Philadelphia restaurants Vetri Ristorante, Osteria, Amis, and Alla Spina) demystifies homemade pizza. His trick is to teach methods for a variety of base doughs of different hydration levels, which allow home cooks to achieve the perfectly-textured crust of a restaurant pizza, even though they don't have that wood oven.

FERMENTING AND PRESERVING

The Noma Guide to Fermentation by René Redzepi and David Zilber

Fermentation is fundamental at Noma: every dish at the restaurant (named the world's best four times over) includes an element that's fermented, whether it's miso or vinegar or black garlic. In this book, chef René Redzepi, along with David Zilber, who runs the restaurant’s dedicated fermentation lab (that's right, they have a fermentation lab), share their techniques for achieving the tangy, deeply savory, overall extraordinary flavor that fermentation can bring to a dish.

The Gentle Art of Preserving by Katie Caldesi and Giancarlo Caldesi

This comprehensive guide to the many ways of preserving covers a range of traditional, old-school techniques, going beyond simple canning to Italian sausage making, Scottish fish smoking, and Sri Lankan chile drying. There are also simple preservation tips that will reduce waste in the kitchen, like instructions for creating frozen spice cubes, stocks, and sauces. You'll learn to make your own butters and infuse oils with flavors—heck, you'll learn to make your own yogurt and sourdough. Basically, you'll fill your kitchen with bacteria—but in a good way!

Five Seasons of Jam by Lillie O'Brien

Learn to make jam—so much jam—with this beautifully photographed guide from Lillie O'Brien of the preserves company London Borough of Jam. The book is divided into seasonal chapters with poetic names like "Alive," "Hot," "Blush," "Barb," and "Frost." In the summer and spring, there are salted cherry blossom jams, nectarine and thyme jams, and strawberry and wild fennel jams. Come autumn and winter you'll make blackberry and cocoa nib jams and pomegranate molasses, along with pumpkin jams.

House of Vinegar by Jonathon Sawyer

This cookbook by chef Jonathan Sawyer is dedicated to showing you the many ways that acid can revolutionize dishes. Learn how the complex flavor of vinegar can elevate any dish, and get 80 recipes for vinegars—and the dishes to use them in.

SIMPLE AND EVERYDAY COOKING

Ottolenghi Simple by Yotam Ottolenghi

In his latest cookbook, chef Yotam Ottolenghi offers 130 flavor-packed recipes—but this time the focus is on achieving his signature delicious flavors with total simplicity and ease. Each dish can be made in a half hour or less; nothing includes more than ten ingredients; every recipe can be made in a single pot; and making ahead is not only acceptable, but encouraged.

America's Test Kitchen Cookbooks

Chronic cookbook creators ATK are out with not one, not two, but five cookbooks this fall.

First up, a collection of recipes from their TV show: The Complete America's Test Kitchen TV Show Cookbook 2001–2019: Every Recipe from the Hit TV Show with Product Ratings and a Look Behind the Scenes.

Next, a cookbook full of what ATK has deemed essential dishes, aptly called The New Essentials. It includes simple weeknight dinners and dinner party favorites, but the point is to take classics and give them the signature America's test kitchen tested-and-improved treatment, adding innovative techniques that make them extra delicious.
