In love with Caprese salad? Then you'll definitely want to try this take on the classic, which gets a dose of sweetness from ripe peaches.

Ingredients

6 servings

6 thick slices brioche or pain de mie, toasted
3 tablespoons unsalted butter, room temperature
5 ounces fresh mozzarella, sliced 1/4" thick
2 very ripe heirloom tomatoes, sliced 1/4" thick
2 very ripe peaches, sliced 1/4" thick
Fresh mint leaves
Extra-virgin olive oil
Flaky sea salt

Preparation

  1. Spread each toast evenly with butter and layer mozzarella, tomatoes, and peaches on top. Top with mint, drizzle with oil, and season with sea salt.

  • I'm trying to stay vegan, so I replaced the butter with some olive oil on the bread and replaced the mozzarella with avocado. Also grilled the tomatoes and added a drizzle of balsamic reduction. Delish!

  • Really an excellent summer weeknight dinner. But we added a bit of balsamic vinegar as well. The mint was a lovely touch!

  • This was really good. I left out the butter as well, since the brioche itself is buttery. I agree with the previous reviewer that fresh ricotta would be a good substitute. I kept mine vegetarian, but my husband added prosciutto to his and left out the additional salt. Overall, a very good open faced sandwich.

  • If you use really good fresh whole milk mozzarella then you don't need any butter. You can also use fresh ricotta for this recipe. Equally awesome!
