S'mores Sandwich Cookies

In theory, campfire s'mores are amazing, but the reality is often a stale graham cracker sandwich filled with thick pieces of unmelted chocolate and gooey marshmallows oozing out the sides. This sandwich cookie makes your s'mores dreams come true. The honey and cinnamon-spiked soft cookie is big enough to hold not one, but two toasted marshmallows, and the thin chocolate coating melts perfectly inside.

Ingredients

Makes 12 sandwich cookies

3/4 cup all-purpose flour
3/4 cup whole wheat flour
1 1/2 teaspoons ground cinnamon
3/4 teaspoon baking soda
3/4 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup (packed) dark brown sugar
2 tablespoons granulated sugar
6 tablespoons honey
1 large egg
1 egg yolk
1 teaspoon vanilla extract
16 ounces bittersweet chocolate, coarsely chopped (about 3 cups), divided
24 marshmallows

Preparation

  1. Step 1

    Whisk all-purpose flour, whole wheat flour, cinnamon, baking soda, and salt in a small bowl.

    Step 2

    Using an electric mixer on high speed, beat butter, brown sugar, and granulated sugar in a large bowl until pale and fluffy, 2–3 minutes. Add honey and beat on medium to combine. Add egg, egg yolk, and vanilla and beat to combine, scraping down sides as needed. Reduce speed to low and gradually add dry ingredients, scraping down sides as needed, until just blended, then stir in half of the chocolate. Cover dough and chill at least 1 hour or up to overnight.

    Step 3

    Arrange racks in middle and upper third of oven and preheat to 375°F. Line 2 rimmed baking sheets with parchment or wax paper. Scoop out dough by the heaping tablespoonful, roll into a balls, and arrange 3 inches apart, 6 on each sheet.

    Step 4

    Bake cookies, swapping the trays and rotating them once halfway through, until golden, 10–11 minutes. Transfer cookies to a wire rack to cool and repeat with second batch. Let cookies cool.

    Step 5

    Place remaining 8 ounces chocolate in a microwave-safe bowl and heat 30 seconds. Stir, then heat 30 seconds more. Repeat until chocolate is melted through. Turn cookies over and, using a small spatula, spread a thin layer of chocolate on flat sides of cookies. Chill cookies to let chocolate set, at least 15 minutes.

    Step 6

    Place marshmallows onto skewers and toast over a flame. Place 2 toasted marshmallows on chocolate side of 1 cookie and top with chocolate side of another cookie to make a sandwich. Repeat with remaining marshmallows and cookies.

    Cookies can be baked, covered with chocolate, and chilled (without marshmallows) in an airtight container for up to 5 days or frozen for up to 1 month.

  • I made these and they look nothing like the photo. Mine were exceptionally sticky (I triple-checked that I hadn't misread the amount of flour) and when baked, turned out very cake-like. While they aren't awful, I can think of a million other cookie recipes I'd rather use than these for s'mores.

  • Not good. The cookies lacked any resemblance to graham crackers and tasted just like chocolate chip cookies with wayyyyyyy too much bittersweet chocolate. Plus the instructions are off in terms of timing for the baking portion of the cookies. They overcooked. When it all came together I could not taste the marshmallow or cookie as the chocolate overpowered everything. If you decide to try this recipe, reduce the chocolate by 25% and shorten the cooking time and temp

  • Yes! This S'Mores recipe is a winner! Hubby loved it. The cookie recipe is wonderful without the marshmallows. The whole wheat, caramelized brown sugar with cinnamon and dark chocolate all blend nicely for a unique flavor experience. Will make again. A great recipe for a night of grilling with the kids.

  • My husband says, "Wow, that's a great S'Mores experience!" We grilled the Kraft S'Mores marshmallows outside and retreated to the pool deck with oozing S'Mores and glasses of milk. The cookie recipe is superior! The hints of whole wheat, honey, caramelized brown sugar with cinnamon and dark chocolate makes the cookie a winner all by itself. I recommend having hand wipes for clean-up. Great choice for a swim party and dosing the Grandkids with a sugar high before returning them to their parents! Definitely will save for future parties.

  • Wow! This was fantastic! They were decadent, gooey and messy without the campfire. What more could you ask for? Plus the smell of roasting marshmallows wafts through the house for the rest of the afternoon. The kids will love to roast them! I will say that I used a mixture of semi sweet chocolate instead, it made it a tad sweeter. All in all would make again! Happy summer indeed
