Breakfast Taco Foil Packs With Black Beans, Zucchini, and Corn

These make-ahead foil packet meals are perfect for camping trips as well as quick and easy breakfasts on the go. The Mexican-inspired ingredients are topped with baked eggs and served with tortillas for a hearty morning meal.

Ingredients

6 servings

2 bell peppers, stemmed, seeded, thinly sliced lengthwise
1 medium zucchini, halved lengthwise, sliced into ¼"-thick half moons
1 small red onion, thinly sliced (about 1 cup)
2 medium jalapeños, seeded, thinly sliced (optional)
1 (14-ounce) can black beans, drained, rinsed
1 cup defrosted frozen corn
6 tablespoons tomatillo salsa
2 tablespoons olive oil
1 teaspoon kosher salt, plus more to taste
½ teaspoon freshly ground black pepper, plus more to taste
12 soft taco-size corn or flour tortillas
6 large eggs
½ cup shredded Monterey Jack cheese (optional)
¼ cup cilantro leaves and tender stems (optional)

Preparation

  1. Step 1

    Cut 12 (12x16") pieces of heavy-duty foil. Layer 2 pieces of foil on top of each other to create 6 stacks. Line top pieces of foil with parchment paper cut to the same size.

    Step 2

    Toss peppers, zucchini, onion, jalapeños (if using), beans, corn, salsa, oil, salt, and pepper in a large bowl. Divide mixture among prepared packs, arranging in the center of each piece of parchment. Bring edges of foil together to enclose each pack, covering completely, then crimp to seal packs closed.

    Step 3

    Prepare a campfire or grill for medium, indirect heat, preferably with hardwood or hardwood charcoal. Let coals burn until covered with ash and glowing red with no black remaining.

    Step 4

    Place packs side by side directly onto hot coals or grill and cook, rotating with tongs occasionally, about 5 minutes. Carefully remove 1 pack from heat and check if ingredients are steaming hot. If necessary, return pack to coals and continue to cook, 5–10 minutes more.

    Step 5

    Meanwhile, wrap tortillas in foil and heat close to the coals until warm, 5–10 minutes.

    Step 6

    Transfer packs with tongs to a flat surface and carefully open them (they will be full of hot steam). Crack 1 egg into the center of each pack and season with salt and pepper. Reseal, return to coals, and cook until egg whites are opaque but yolks are still runny, 4–5 minutes.

    Step 7

    Carefully remove packs from coals, open, and sprinkle evenly with cheese and cilantro, if using. Serve each pack immediately with 2 warm tortillas.

    Packs can be assembled and chilled for up to 2 days or frozen for up to 1 month.

    Packs can be prepared in an oven. Preheat to 450°F and place packs on rimmed baking sheets. Bake until steaming hot, about 15 minutes if packs were refrigerated and about 30 minutes if baking frozen packs (no need to defrost). Carefully open packs (they will be full of hot steam), crack 1 egg into the center of each, season with salt and pepper, and reseal. Return to oven and cook until egg whites are opaque but yolks are still runny, 4–5 minutes more. Top with cheese and cilantro, if using. Serve immediately.

  • To SABASMURF, who seems to have been having a really bad day: first of all, maybe don't dunk so hard on other people trying to act superior when you've got "smurf" in your user name. Just kinda drains away the authority. Second, that commenters point was 100% valid. & you were totally unnecessary w/ all the nastiness. Seriously - grow up. All they were saying is - and I wish people said it more! - "don't criticize a recipe you changed significantly from how it was written." Acknowledge that maybe the original recipe was worked out & deserves to be critiqued on it's own - not on the basis of the goofy-ass stuff you decided to mess it up with. Thanks!

  • Super simple to cook at a campsite, and delicious — can't ask for more! Cut the recipe in half, made the packs up the day before going camping and prepared as described, using a little portable grill (sat the packs directly on the charcoal). Best breakfast I've ever had sitting next to a tent. Don't skip the cheese.

  • @LBU you are a twit. That was a nasty review of a recipe that was not necessarily meant to be a time-saver. Had you paid the slightest bit of attention, you would have noticed this recipe is designed for campers about whom you are clueless. This is exactly the type of meal packet campers would have to use . You're not traveling with your kitchen. Obviously, you can make the same recipe to be served right away which would take a lot less time. In the future, if you're going to critique a recipe, make sure you know what you're talking about. I have not made this recipe yet however I plan to in the very near future. Until I do so I'll refrain from making any kind of criticism.

  • @LBU, normally I might agree, but this is nothing but annoying clickbait. I went to the recipe all excited to find a timesaver, but any reasonably experienced cook can see, reading this, that it is NOT a timesaver, and there are far quicker/easier ways to do this. I'm also wondering if you or anyone else actually made it by freezing the packets and then baking them from frozen. I have my doubts that frozen zucchini, salsa, etc are going to come out that delicious when they are simply baked in a closed packet from frozen.

  • Why go thru all the wrapping and re-wrapping? Just make the damn things w/out the extra labor. You can do these in a skillet or baking pan w/tight lid or foil cover. Good ingredients that can be varied for personal tastes. Good flavors and idea--hobos are total waste of time.

  • Lovely texture and fresh taste! Subbed tomatoes for the black beans, as I was only making 2 servings. Baked packets in the oven. Put 2 eggs in hollowed out depressions in each packet. Eggs took about 10 minutes to finish whites. Served on tortillas topped with grated and melted chipotle jack cheese and bloody Mary's. Delicious!

  • This recipe is fresh and healthful. Offers flexible change outs for different elements of the package. In regards to the previous review - Don't review a dish if you didn't prepare it as the creator has written it. It's just silly to write a review about something when you didn't follow the recipe. It's not fair to readers or to the recipe author!

  • Pretty good meal. We didn't make hobo packets and I left off the egg. I put the mixture in individual bowls. Added garlic powder, cumin& chipotle powder. Instead of using the oven, I nuked in microwave for 7-8 minutes. Added Monterey jack and sour cream, tore up the tortillas and mixed them in. My husband said , "not bad."
