Fall's Best Salad Is an Easy-to-Make Crowd Pleaser

We're constantly searching for go-to recipes. You know what I mean: the ones you turn to over and over again. Recipes with a short ingredient list that you just know will kill it, either for a solo weeknight dinner or at a more elaborate gathering with friends.

When we're in the mood for pasta, it doesn't get much simpler or satisfying than a classic cacio e pepe. On those nights when we're craving chicken, we turn to Thomas Keller's bulletproof roast chicken.

But what's that concept look like when we talk about salads? We're looking for something healthy, but still hearty and filling. Ingredients matter too -- the dressing should be simple and there shouldn't be too many complex garnishes or components that call for their own preparation.

One of our favorites combines two of the most popular green foodstuffs of the past decade: Kale and Brussels sprouts.

The salad's foundation is equal parts thinly sliced kale and shredded brussels sprouts. The greens mix well together, the Brussels mellowing out a bit of kale's bitterness. The whole thing gets showered in pecorino cheese, studded with toasted almonds, and tossed with a simple lemon-Dijon dressing.

It's the kind of salad that's satisfying enough to eat all on its own, but it also pairs perfectly with any piece of protein you happen to have on hand: Soft-boiled eggs, seared salmon, roast chicken.

For a dish that comes together in less than 20 minutes, there's a lot of deliciousness going on here and, needless to say, it deserves a place on anyone's holiday table. Just be sure to remind folks to leave room for the turkey.
