What to Cook This Week: Spring Breeze Edition

Easy breezy weeknight dinners for the first week of May.

We found a few recipes that are low on effort and high on return, leaving you more time to relax throughout the week. Open your kitchen windows, feel the breeze, and crack open a bottle of new California wine. Just because it’s a Tuesday doesn’t mean things shouldn’t be looking up.

Monday: Thai

Cut back on the grease and over-sweetened restaurant sauces by doing Thai your own way. This Thai dish is on your table in less than a hour, and clean-up won’t take more than 15 minutes. Feeding fussy eaters? The spice from yellow curry and the bright colors play around how vegetable-forward and wholesome this dish is.

Tuesday: Tacos

Make these no-brainer poblano and mushroom tacos for a Taco Tuesday/Cinco de Mayo doubleheader. If you're reeling at the ingredient list, these piquant tacos can be assembled using minimal bells and whistles.

Wednesday: Salmon Tartines

These salmon tartines will convince you that sandwiches for dinner are a great idea. The only cooking required is getting the capers crispy in oil. Buy some good quality smoked salmon, open some windows, and enjoy spring.

Thursday: Shrimp Scampi

With richness from butter and bite from garlic, shrimp scampi is how you make pasta too good to be true. The indulgent one-pot pasta couldn’t be easier for a mid-week meal, as long as you have cleaned shrimp and plenty of butter. Though you don’t really need a recipe, we’ve included one just in case. Whatever you do, keep your shells for broth—it’ll sweeten up future seafood dishes.

You made it to the weekend, and here’s your reward: golden, pan-seared pork chops. Even if you’re not able to book it out of the office early, these won’t take all night to put together. The best part? They’re a gorgeous cut if you’re entertaining but simple enough if you’re staying in and relaxing after a long week. Flipping the chops several times brings out that golden crust everybody wants.
