Go light on the salt when seasoning these chops; the marinade is fairly salty, especially after it reduces.

Preparation
Step 1
Whisk shallot, brown sugar, fish sauce, vinegar, and pepper in a shallow dish. Using a fork, pierce pork chops all over (to allow marinade to penetrate faster) and add to marinade in dish. Turn to coat. Cover and let pork chops marinate at room temperature, turning occasionally, 20 minutes.
Step 2
Remove pork chops from marinade, scraping off excess (reserve marinade for sauce). Heat oil in a large skillet over medium-high heat. Lightly season pork chops with salt. Cook until browned and cooked through, about 4 minutes per side. Let pork chops rest 10 minutes before serving.
Step 3
Meanwhile, bring marinade to a boil in a small saucepan and cook until reduced to 1/4 cup, about 4 minutes. Serve pork chops with reduced marinade and lime halves.
Step 4
DO AHEAD: Chops can be marinated 1 day ahead. Chill, turning bag occasionally.

Back to TopMade as written and loved! Well, no salt as most have said due to fish sauce (Red Boat all the way!). Very balanced dish. Super umami and hint of sweet. Second time we used as protein in a rice bowl with a terrific Asian cucumber salad recipe from another site (not sure if I can mention that here, but we were feasting at home, wink wink), and so, so good as well!

Yum, made this twice in 2 weeks. Omitted salt as fish sauce is enough. I heat up the grill until hot, and the chops were delicious. Served with rice noodles and vegetables bowl, so yummy. 2nd time, I used boneless chops, sliced thinly 1/4" thick and quick grill on high heat. So good and easy.

Yum. Used this marinade, didn’t add salt and didn’t add as much water as called for based on my taste and other recommendations. I broiled in the oven. Very good. Vietnamese Takeout at home!

This recipe was amazing! We are definitely adding it to our regular rotation. It would be great if you added a small red chili pepper or two, or some sambal as someone else suggested. Don’t hesitate, make these pork chops!

We make this at least once a month. Very quick and easy with great flavor. Works equally well with boneless and bone-in chops. Can substitute scallion whites and garlic for the shallot. We like to serve with lots of fresh cilantro.

Beautiful tasting dish. Do not add additional salt due to the fish sauce. Although the smell if the fish sauce isn't desirable, you will fall in love with its bountiful flavor. I stir fried thai noodles and broccoli as my side. Want to wow guests? Make this dish.. just make sure you marinate the day before to cut down the smell.

Delicious! Added 1 T. sambal and 3 cloves of chopped garlic. Sauce is good with white rice. Also served it with stir fried bok choy (oil, scallion, garlic, chicken boullion). Next time will marinade overnight.

This is my "go to" marinade, and I love it. However, I do not add any extra salt, and for the most part find the left-over marinade too salty (maybe it is the brand of fish sauce I use?) to use as a sauce. But it is truly a fantastic marinade.

Was very tasty, definitely 4 forks... I cut the sugar and added more fish sauce (both to taste). Didn't need to add any additional salt since fish sauce is plenty salty enough. Also used sliced pork butt instead of pork chops -- more juicy and tender.
